Bean Pot Breakfast Dishes


Best Ever Brunch Bake (2010 Bean Pot Recipe Contest Winner)
1 Can of refrigerated biscuits, 10 large eggs, 2 cups of browned sausage or bacon (could also use sliced ham), 1 cup of chopped onion, 1 cup chopped green peppers, 1 Cup of shredded cheddar cheese, 1 Cup mozzarella cheese. Salt and pepper to taste.

Spray the bottom of your bean pot lightly with cooking spray.
Next, line the bottom of the bean pot with the biscuits (the more you can squeeze in, the better!)
In a separate bowl, whisk eggs together (add a dash of milk, if you like).
Add your meat and veggies to the egg mixture, and throw in a dash of salt and pepper.
Mix in the mozzarella cheese.
Pour the mixture from the bowl over the biscuits in the bean pot.
If the biscuits and add-ins aren't covered to your liking, add eggs as needed.
Cover with cheddar cheese- add more, if you like.

Bake uncovered in a 350 pre-heated oven for 20 minutes, or until the egg mixture is firm, and cheese is melted. Let settle for 3-5 minutes, serve and enjoy! (Recipe courtesy of Ondria Witt)
 
 
 
Bean Pot Breakfast -French Toast & Sausage
The evening before: cube approx. 10 slices of "stale" or fresh bread.
Dump enough bread cubes into the bean pot to fill it about half way.
In a separate bowl whisk 5 eggs w/ 1/3 c. of milk, a shake of cinnamon or two, a dash of nutmeg.
Pour over bread cubes. Place in refrigerator.
 
Upon waking in the morning, turn on the oven to 350 degrees.
Squeeze bottled pancake syrup over bread cubes (Just an "S" shape both ways).
Place a layer of foil over bread cubes and twist foil to make "handles" on each end. Place sausage links on foil (however many you want) bake approx. 45 minutes.
 
 
 
 
Christmas Morning Breakfast
8 Apples - 4 varieties (for different textures & flavors).
Peel, core & chop apples.

Place in bowl;
add 3/4 cup water and 3/4 cup sugar;
1 Tbsp cinnamon;
if you like, add 1/3 cup raisins or Craisins & some pecans, mix & put all into bean pot.

At 11PM, Put the Bean Pot in your oven at the lowest temp. (about 250 F).

When you wake up in the a.m., your house will smell marvelous!
Serve the hot Apple Topping over pancakes or waffles.
 
 
Fruit & Oatmeal Casserole
1/2 cup brown sugar
2 cups half & half
2 Tablespoons butter
1/2 teaspoon salt

Combine the above 4 ingredients in a saucepan over medium heat.
Simmer until the butter is melted and the mixture is smooth. Remove from heat.
 
Add:
2 teaspoons cinnamon
1 cup quick cooking oats
2 cups peeled & chopped apples
1/2 cup chopped dried apricots
1/2 cup chopped pecans
1/2 cup raisins
2 tablespoons chopped dried cherries

Mix well. Add to your bean pot.
If the mixture seems dry - moisten with some additional half & half.
 
Top with:
Cinnamon Oat Nut Topping:
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 cup chopped pecans
1/4 - 1/2 cup quick oats
 
Mix well and sprinkle over the fruit mixture. Dot with butter.
Bake uncovered in a preheated oven @ 350 for 20-30 minutes.
Serve warm, great with vanilla ice cream for a dessert option!
 
 
 
Bean Pot Dutch Apple Pancake
In your favorite bean pot: at 350*-
heat 2 cans apple pie filling, 2Tbs Butter & 1 tsp cinnamon for 5 min.
 
Meanwhile in a bowl, beat 2 eggs, add 1/2 C. milk, 1/2 C. flour, 1 Tbs sour cream, 1/4 tsp salt. Beat until smooth & pour over apple mixture.
 
Bake 20 to 30 min. or until golden brown. Dust with powdered sugar or cinnamon & sugar mixture.
Great for breakfast or brunch or serve as a great desert.
 

Strawberry Coffee Cake

1 C. AP Flour, 1/2 C. Sugar, 2 tsp. Baking Powder, 1/2 tsp. Salt, 1/2 C. Milk, 1 Egg, 2 tbsp Melted Butter, 1 1/2 C. Sliced Strawberries. For Topping: 1/2 C. AP Flour, 1/2 C. Sugar, 1/4 C. Cold Butter, sliced.
Directions: Mix flour, sugar, baking powder & salt. Add milk, egg & melted butter- beat for about 2 minutes. Pour batter into lightly sprayed Bean Pot. Top batter with sliced strawberries. In a separate bowl: combine sugar & flour. Cut cold butter into mixture until mixture resembles crumbs. Sprinkle crumbs over the strawberries in Bean Pot. Bake in a 375 pre-heated oven for 30-35 minutes w/the lid off. (Oven time and temp may vary.) Serves 8.
