Bean Pot Soups, Stews & Chili Dishes

 
HamburgerVegetable Soup
1 lb ground beef, 1 medium onion (chopped), 1 Cup diced green pepper, 4 garlic cloves (minced), 6 C beef broth, 1 can Italian stewed tomatoes, 1 pkg frozen cut green beans (9 oz), 1 can tomato sauce (8 oz), 1 C small cooked pasta (like elbow macaroni), 1 Tbsp Worcestershire sauce, 2 tsp dried oregano, 1 tsp dried basil, 1/2 tsp pepper.
Directions: In a skillet, cook the beef, onion, green pepper and garlic over medium heat until meat is browned. Drain excess grease. Dump all remaining ingredients into Bean Pot. Add meat, onion, pepper and garlic to Bean Pot and stir to mix well. With the lid on, microwave on high for 30 minutes or heat in a 350 degree oven for 30-40 minutes. Serve with salad and a yummy crusty bread.
Beef Stew
Add desired amount of the following items:
sliced potatoes (unpeeled), baby carrots, mushrooms, onions, beef stew meat.
Then, add the secret ingredient: stir in 1-2 cans of tomato soup (add the amount needed to cover all above ingredients). After coating all with the soup, then lay on top 1-2 bay leaves & cover.
Bake at 275 for 5 hours or at 350 for 2-3 hours.


Sausage Soup
1 lb Smoked Sausage-Beef
1 can drained rinsed green beans
2 cups diced cabbage
1/2 small diced onion
2 stalks celery diced
1 bell pepper diced
1-1/2 cups diced carrots
1-1/2 cups diced zucchini
1 jar favorite spaghetti sauce
1 spaghetti sauce jar of water

Add all of the above to your favorite bean pot in the order listed.
Place in the microwave for 30 minutes.
Remove from microwave stir and replace cover and let site for 10 minutes and then serve.
Serve with your favorite bread.
Turkey Chili
Pour 2 cans of kidney beans and 2 cans of pinto beans in the bean pot.
Cook 2 lbs of ground turkey in a cast iron skillet til all pink is gone. Drain. Set aside.
In skillet, pour 2 tbsp of olive oil to saute 1 cup each of chopped yellow onions, celery, & spinach. When the vegetables are semi soft, add 2 tbsp of cayenne pepper, red pepper, 1tbsp salt and pepper, garlic powder, & 2cups of salsa 'til mixed together.
Add to beans in bean pot mixed thoroughly til hot and flavors come together.
Bake at 350 for one hour.
Great for Gluten free and healthy eating.
Bean Pot Chili (Frito Pie)
1 lb. lean ground beef, browned and drained
1) 14 1/2oz. bag of original Fritos
1) 14.5oz. can diced tomatoes, un-drained
1) 15oz. can black beans, rinsed and drained
3) 15oz. cans Hormel Chili, 2 with beans, 1 no beans
1) 16oz. package Velveeta, cut in 3/4 - 1" cubes

In a large pot, add all ingredients, except the Velveeta and Fritos, to the drained, browned ground beef. Stir well and cook over low for about 15 - 20 minutes. Layer 1/4 of the Fritos into the bottom of the bean pot, followed by 1/3 of the chili, then poke in 1/3 of the Velveeta cubes, evenly. Repeat this layering 2 more times. Crumble the remaining Fritos and scatter over the top. Cover and bake at 350 degrees for 30 minutes!


Mexican Soup
3 chicken breasts, cooked and pulled apart.
Add 2 cans of chicken broth, 2 cans of navy beans, 1 can of black beans, drained and washed, 1 can of green-chiles, 1-16 oz can of med. salsa, 16 oz's of nacho cheese, 2 cans of shoe pep. corn.
Simmer all ingredients on low about one hour.
Serve with cornbread.
 Taco Soup
1 Lb steak, cut into bite sized pieced, cooked & drained
1-14 oz can of Kidney beans
1-28 oz of diced tomatoes
1 -14 oz can corn * (*DO NOT drain liquid)
I also added some of V8 Sweet Red Pepper Soup.

Add all ingredients into the bean pot and cover.
Sprinkle in desired amount of Mrs. Dash Chipotle seasoning and stir.
Cook in microwave for 20 minutes (Lid on.)
Serve with Sour Cream, Cheese and Corn Chips
Tortellini Taco Soup
1-1-1/2 lb. of ground beef
1 can (14.5 oz.) petite diced tomatoes, un-drained
1 can (10 oz) Ro*Tel® Original Diced Tomatoes & Green Chilies, un-drained
1 can (15 oz) Tomato Sauce
1 pack of Dry Taco Seasoning
1 can (15-1/4 oz.) Whole Kernel Corn, un-drained if desired
1 pkg. frozen cheese tortellini

Cook ground beef, season to own desire. Drain grease.
Take cooked ground beef and the rest of the ingredient and combine in bean pot. (Add juice from corn if you would like more juices, if not drain corn juice.)
Cover bean pot and cook in microwave for 10-15 min. Stir half way through.
Top with cheese, serve with tortilla chips, or crushed Frito corn chips.
Chicken Stew
Place chicken breast in a Bean Pot.
Add 1 can chicken broth, 1 Can Cream of chicken and 1 pkg Onion Soup Mix.

Cook at 250 for at least 4 hours.
Add string beans and pour over angel hair pasta.
Cabbage Beef Soup
1/2 head of cabbage (boiled 10 min. on stove, drain water).
Place in Bean Pot

Add: pound ground beef or turkey (brown in 2Tbsp. Olive Oil. place in Bean Pot).
Add the following ingredients to Bean Pot: 2 cans Black Beans, drained and rinsed (also use Pinto or Kidney), 14oz Beef Broth (add water to make 2cups liquid), 4 beef cubes, 1/8 tsp. pepper, 1tsp.            c
umin, 14.5oz crushed tomatoes, 3/4cup tomato sauce.
Bake 350 degrees for 45 min-one hour. Enjoy!

Southwestern Corn Chowder
3 T Butter
1 med onion diced or 3 tablespoons dried onion flakes
can chicken broth, 5 cups milk
32 oz bag cubed hash browns
16 oz med salsa or 1 can Rotel tomatoes
1 pound Mexican Velveeta-cubed
1 can each whole and creamed corn

In bean pot, place broth, butter, onion and potatoes with 3 cups of the milk - cover with saran wrap and heat at high power in microwave for 10-12 minutes.
Test potatoes if not tender cook in 2 minute increments till done.
Stir in cheese, corn and salsa- heat in 2-3 minute increments stirring after each one till melted well.


OPTIONS: Add 1 small bag of the precooked chicken fajitas from Wal-Mart freezer section- dice it up and add with the cheese.
If you are a seafood lover, toss in a small bag of frozen shrimp (no tails) or bag of crawfish.
If you do this, add 1 tsp or so of Old Bay seasoning. This will take the heat level up a bit so taste after you add a 1/2 or so if you can't handle Texas heat!!

Stuffed Pepper Soup
Brown 2 lbs. Ground beef and drain put in bean pot (you can brown the meat in the microwave too), add 1- 28 oz can tomato sauce, 1-28 oz can water, 1-28 oz can diced tomatoes undrained, 2 c. cut up green peppers (about 1" chunks), 1 c. chopped onion, 2 tsp. beef flavored base or 3 beef boullion cubes, 2 tsp. salt, 1 tsp pepper, 1 tsp. garlic powder.
Bake for 1 hour in 350 degree oven. Then add 2 cups cooked rice and stir everything together. Cook another 30 minutes. Left overs (if any) freeze well.
Texas Black Bean Soup
2 15-ounce cans black beans, rinsed and drained
1 14 1/2-ounce can stewed tomatoes or Mexican stewed tomatoes, cut up
1 14 1/2-ounce can diced tomatoes or diced tomatoes with green chilies
1 14 1/2-ounce can chicken broth
1 11-ounce can Mexi-corn, drained
2 4-ounce cans chopped green chilies
4 green onions, thinly sliced
2 to 3 Tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon dried minced garlic
Mix together in bean pot. Cook 60 min. at 350. 


Bean Pot Pasta Dishes

 
 
 Bean Pot Pizza Bake
1 1/2 lbs hamburger (browned)
1 chopped onion
2 large bags of Mozzarella cheese
1 pkg sliced pepperoni
1 box of cooked noodles
1 can of cream of mushroom soup
1 can mushrooms
2 cans pizza sauce
Mix together and put in bean pot, cover and bake at 250 degrees for 4 hours!
 
 
Bean Pot Baked Ziti
Brown one pound of sausage in the Bean Pot in the microwave until fully cooked.
Stir and break up sausage every 4min.
Cook 1/2lb of ziti shaped pasta (or any other pasta shape) in boiling water until little firm, drain, then add to the sausage in the Bean Pot.
Mix in 2 cups of bottled spaghetti sauce, 16 oz tub of Ricotta cheese and 2 cups of Mozzarella cheese. Stir together, then top with one more cup of Mozzarella cheese and 1/2 cup of grated Parmesan cheese.
Then cook in the microwave for another 10min. Great with garlic bread and salad!
 
 
Bean Pot Lasagna
1 pound package Italian Sausage Roll
1 - 9 ounce package no-boil lasagna noodles, broken into 2 pieces
12 ounces ricotta cheese
3 cups shredded mozzarella cheese, divided
2 - 26 ounce jars pasta sauce
1 tablespoon dried parsley

Spray interior of slow cooker with non-stick vegetable spray.
In medium skillet over medium heat, crumble and cook sausage until brown.
Place in Bean Pot. Add noodles, ricotta, 2 cups mozzarella, pasta sauce and parsley.
Stir gently to combine. Cover and cool on low for 4 to 6 hours
5 minutes before serving, top with remaining 1 cup mozzarella cheese. Cover to melt cheese.
 
 

Bean Pot Beef Dishes

 
Celebrating Home Roast
1 can cream of mushroom soup
1 can of Coke
1 pkg. Lipton’s Onion Soup mix

Place roast in Bean Pot. Cover with the lid. Bake in 350°F oven for about 3 hours.

Pot Roast
Place the roast in the Bean Pot.
Add potatoes, carrots, onions, celery, salt and pepper.
It isn’t necessary to add water. Cover with the lid.

Put into 325°F oven for 2-3 hours, depending on how large the roast is.
Remove roast and vegetables from bowl. Use broth to make gravy.

Bachelors Roast
Place roast (about 3 lbs.) in Bean Pot and pour 1 can of Coke and 2 cups of catsup over it.
Cover with the lid. Cook for about 30 minutes/lb.
Optional: Add onions and pressed garlic.

If there are any leftovers just shred and mix with the sauce and you have a BBQ for a couple of meals.


Burgundy Pot Roast

Place the roast in the Stoneware Baking Bowl.
Add 1 cup burgundy wine, 1 can (8oz) tomato sauce & 1 pkg. dry vegetable soup mix.
Cover with the lid & bake 3-3 1/2 hours at 325°F.
Serve hot over egg noodles.


Vegetable Pot Roast
Place roast in Bean Pot.
Add vegetables (carrots, onions, and potatoes.)
Mix one can of cream of mushroom soup with a pkg. of dry onion or vegetable soup mix.
Add mixture to Bean Pot.
Cover with lid; bake at 375°F for 2-3 hours.


Round Steak & Mushroom Gravy

Place round steak in Bean Pot.
Add 1 can cream of mushroom soup and 1 can water.
Bake in 350°F oven for about 1 hour.

Melt In Your Mouth Brisket
3 lbs trimmed brisket (sliced into 3 in strips)
8 - 12 oz of mild salsa (pour on top)
Baked for 4 - 5 hours at 300 degrees
Drain juice and make gravy for dipping or potatoes
Serve brisket with your favorite barbeque sauce and hamburger bun.


Sweet Chuck Roast
Chuck Roast
2 small cans of stewed tomatoes (with garlic, Basil and Oregano)
3/4 cup brown sugar
2 bay leaves
1 large onion (Chopped)
Cover and bake at 325 degrees for about 3-4 hours
 
 
Dorito Meal
1 pound cooked Ground Beef or Turkey
1 can Chili
1 can Enchilata Sauce
1 10 oz can Tomato Sauce
2 cups cheese
1 bag Nacho Cheese Doritos crushed

Cook ground beef or turkey.
Mix in Bean Pot cooked ground beef or turkey, chili, enchilada sauce, tomato sauce and cheese.
Take out 1 cup of crushed Doritos set aside.
Mix remainder of Doritos in Bean Pot until nicely covered.
Take the 1 cup of remaining Doritos and spread on top with some grated cheese.
Cook for 1 hour in 350 degree oven.
When done you can top with salsa and sour cream
 
 
Barbecued Beef for Sandwiches
1 beef roast, 2 1/2 to 3 pounds, top round, chuck, etc.
1 cup barbecue sauce, your favorite or homemade
1/2 cup  apricot preserves
1/2 cup chopped green bell pepper
1 tablespoon Dijon mustard
2 teaspoon light brown sugar, packed
1 medium onion, sliced

Trim beef roast and cut into 4 uniform pieces.
Place roast in bean pot.
Combine remaining ingredients and pour over roast.
Cover and cook 200 degrees for 8 hours, or until beef is tender.
Slice beef then return to juices in cooker.
Cover and cook for 20 minutes longer.
Serve this barbecued beef on warm split buns with coleslaw, or serve with hot cooked rice and a salad.
 
 
Spiced Pepper Steak
1 1/2 pounds round steak, cut into strips about 1 x 3-inches
2 tablespoons cooking oil
1 large onion, chopped
1/4 cup soy sauce
1 clove garlic, minced
1 teaspoon sugar or sugar substitute
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground ginger
1 can (14.5 ounces) diced tomatoes with juices
2 medium green bell peppers, seeded and cut into strips
1/4 cup cold water blended with 1 tablespoon cornstarch

Heat oil in a heavy skillet over medium heat; brown beef strips quickly.
Drain beef and place in Bean pot then top with onion.
Combine soy sauce, garlic, sugar, salt, pepper, and ginger; pour over beef and onion.
Cover your Bean pot; cook at 350 degrees setting for 2 hours.
Add tomatoes and green bell peppers; cook 1 hour longer.
Stir cornstarch mixture into the pot; cook on HIGH setting until thickened. Serves 6.
 
 
French Beef Dip
3- 6 lbs. Boneless beef (any cut)
3 cans beef broth
1 pkg. onion soup mix
2 cans or bottles of beer
2 tsp sugar
1 tsp. Dried or minced, fresh garlic

Put all ingredients in bean pot and cook with lid on at 200 - 250 at least 6 hours, till meat shreds and is very tender.
 
 

Bean Pot Chicken & Turkey Dishes

 
 
Roasted Turkey Breast
Thaw and wash turkey breast, Place in Bean Pot and cover with the lid.
Bake at 350°F for 2 ½ to 3 hours. Serve.
 
 
Crispy Honey Chicken
3-4 pieces of boneless skinless chicken breasts
1 Egg
1 1/2 Cups crushed Corn Flakes (or comparable cereal like Honey Bunches of Oats)
Honey for drizzle
 
Preheat oven to 350 degrees.
Spray Bean Pot with non-stick cooking spray. Beat egg in bowl or prep tray.
'Wash' each piece of chicken in the beaten egg, then coat in crushed cereal.
Place chicken into the Bean Pot, side by side and drizzle with desired amount of honey. Bake with the lid on for 45 minutes. Remove lid, return chicken to oven and turn oven off.
Allow the chicken to crisp for 5 to 10 minutes. Serve and enjoy!
 

*Bean Pot Scalloped Chicken

1 Can Cream of Mushroom Soup
3/4 C of Milk
1/3 Lb of Velveeta Cheese
2 C of Chopped Cooked Chicken
8 oz of cooked Elbow Macaroni
1/2 C melted butter (divided), 1 1/2 C bread crumbs
Combine soup, milk and cheese in a large bowl. Add chicken and macaroni. Stir in 1/4 C melted butter. Spray bottom of Bean Pot. Pour mixture into Bean Pot. Toss bread crumbs with remaining butter in a separate bowl. Spread bread crumb mixture evenly over top of the soup/macaroni mixture in Bean Pot. Bake (uncovered) for 60 minutes, or until top is bubbly and golden brown. Serves 6. ‎* Bake in a 350 degree preheated oven.

**This recipe can easily be doubled to serve more people, and can be made the night before. Put casserole together, do not bake & refrigerate overnight or for up to 8 hours. Next day, let it come to room temp, and then bake as directed. If you do not let it come to room temp, Bean Pot may crack in the oven!
 
 
 Warm Chicken Sandwiches
1.5 lb boneless chicken breasts
1 can cream of chicken soup
1 can cream of celery soup
1/2 packet Lipton onion soup mix
1-2 pkg of dinner rolls

Put chicken breasts whole in bottom of bean pot. Pour on can of cream of chicken and can of cream of celery soup. Add Lipton onion soup mix and mix with the soup. Cover and bake at 250 degrees 6-7 hours. When its done, the chicken will just fall apart. Shred it with a fork and put on dinner rolls with butter!
 
 
 
 Salsa Chicken
1 1/2 lbs. boneless chicken breast, cut in bite size pieces.
Brown in 2 Tbsp. olive oil. While chicken is browning, add 2 cups instant brown rice to bean pot along with 1 cup water, stir and set aside.
After chicken is browned, place on top of rice in bean pot.
Top with 24oz. jar of your favorite salsa. Put lid on bean pot and microwave on high for15 minutes. Top with shredded cheddar and enjoy.
(Salsa heat level will determine spiciness of dish.)
 
 
 
Hawaiian Chicken
Place whole chicken (This recipe uses a 5 lb whole chicken) in Bean Pot, pat dry.
Using pastry brush, brush on a thick coat of Apricot Jam.
Pour a can of pineapples over chicken with some maraschino cherries.
Cover with lid & bake for 1-½ hours at 375.
Use juices from chicken as gravy.
Serve with white rice & a green vegetable..
 
 
 
Chicken with Wine and Rice
Boneless Chicken Breast cut into big pieces or strips
1 1/2 cups uncooked white rice
3 cups of white wine (any kind will do)
2 cans of cream of mush soup
2 cans of cream of celery
1 1/2 package of onion soup mix
 
Mix all together and bake 325 for 2 1/2 - 3 hrs
 
 

 Chicken and Rice
1 pkg boneless, skinless chicken breasts
1 box of Rice-A-Roni Garlic & Chicken rice
Some garlic & herb Mrs. Dash seasoning.

Put contents of rice-a-roni box, 2 tbsp butter, 2 cups HOT water in bean pot.
Stir until butter is melted and seasoning packet from rice is dissolved.
Place chicken over top, sprinkle with Mrs. Dash.
Bake in oven at 375* for 45 minutes.
Serve it with some steamed veggies!


Fantastic Fajitas

(Faster, healthier and less messy than oven or stove top)

Place 8-10 FROZEN boneless/skinless chicken tenderloins or 4 Frozen boneless/skinless chicken breasts in your bean pot.
Add 1 TBSP olive oil or veg. oil and 1/2 packet of fajita seasoning.
No need to stir. Cover and cook in microwave on high for 8 min.

While your chicken cooks, slice 1 or two of the following veggies...choose your veggies to personalize it for your family: green bell pepper, yellow and red bell pepper, onion, and tomato.
After 8 minutes take out bean pot.
Stir and add veggies on top along with 1/4 cup of water.
Replace lid and cook for 15-25 additional minutes or until chicken is cooked thoroughly.

Serve with warm tortillas (place those warm tortillas in your CH tortilla warmer.
Simply warm an empty Tortilla Warmer in the microwave for 5 minutes.
Your tortillas will stay nice and warm for your second helpings!)


The Bomb Chicken
Take 4 boneless skinless chicken breasts, put 1 cup salsa and 4 tablespoons of Celebrating Home's SW chipotle dip (more if you like it spicy).

Bake at 350 for an hour or so (until chicken is tender).
Shred chicken add 1/2 cup sour cream and 1/2 cup cheese.
Put back into the oven for about 15 minutes or until cheese is melted.
Place in warm tortillas.


Bacon Peppered Chicken
1 T. Olive Oil
1 tsp. Cajun Seasoning
1 C Fiesta Blend Shredded Cheese
1/2 Pkg. Frozen Pepper Stir Fry vegetables
4 Boneless Chicken Breasts
6 Slices Bacon; Diced

Slightly brown chicken breasts on stove-top in skillet w/olive oil.
Place chicken breasts in bottom of bean pot.
Fry bacon until almost crisp.
Add vegetables to bacon; continue to fry until bacon is crisp. Drain.
Sprinkle chicken breasts w/seasoning.
Add bacon/vegetable mixture; top w/cheese.
Bake in oven @ 350 for 35 minutes or until cheese is bubbly.
Serve on a bed of rice. Serves 4


Dr. Pepper Chicken
boneless chicken breast (4)
1 can dr pepper
1 can cream of chicken soup

Place all ingredients in your bean pot, cook at 350 degrees for approximately 1 hr.
 
 
Barbecued Chicken and Cornbread Casserole
1 pound of cooked, or practically cooked chicken, cubed or shredded
1 small sweet potato, peeled and cut in 1-inch chunks
1 red onion, diced
1 cup frozen or fresh corn
1 bottle of your favorite barbecue sauce (18 oz)
1/4 cup hot water

cornbread topping:
use a mix and follow the directions on the box (minus the oil or butter)

The Directions:
Spray the inside of your stoneware with cooking spray.
Cut up the chicken and sweet potato, and add to the Bean pot. Add the corn.
Empty the contents of the barbecue sauce bottle, and then add 1/4 cup of hot water to the bottle, shake, and pour that out, too. Mix well with a spoon.

In a separate bowl, mix together the cornbread topping. You don't need to mix well, I just used a fork. Spread the topping on to the chicken mixture.
Cover and cook on 250 degrees for 6-8 hours.
 
 
Smothered Chicken with Garlic
3 tbsp fresh rosemary or 1 tbsp dried rosemary, divided
1/2 tsp paprika
1/2 tsp salt
1/4 tsp ground black pepper
1 whole chicken about 4 lb
1 lemon, cut into quarters
1 tbsp olive oil
2 heads garlic, peeled

Preheat oven to 350 F
Lightly spray bean pot with oil.

Combine half of the rosemary with paprika, salt and black pepper in small bowl; set aside Remove and discard giblets and neck from chicken cavity.
Rinse chicken with cold water; pat dry with paper towels. Trim excess fat, if necessary.

Place lemon quarters and remaining rosemary inside cavity of chicken.
Place chicken breast side up into bean pot.
Rub chicken with oil and seasoning mixture, arrange garlic around the bird in the bean pot.

Bake with lid on for 60 minutes
Remove lid and continue roasting 30-40 minutes
Yield: 4-6 servings
 
 
Cranberry Chicken
Mix one can of whole berry cranberries w/ can of cream of mushroom soup & one packet of onion soup mix.
Pour over top of chicken in bean pot.

Cover with lid, place in oven; bake for 1 1/2 - 2 hours at 350.
 
 
 
BBQ Chicken
Place meat in Bean Pot. Pour your favorite barbeque sauce over all.

Bake at 350°F until done.
 
 
Creamy Cheesy Chicken Bake
4-6 boneless/skinless chicken breasts seasoned with salt and pepper
2 cans cream of mushroom (or your choice of cream soup)
16 oz Sour cream
1 cup shredded mozzarella cheese (or to taste)

Put chicken an bottom of bean pot, mix remaining ingredients and pour over chicken.
Bake at 350 F for 30-35 minutes.
Remove from oven let stand 5 minutes before serving over rice or egg noodles along with your favorite side dish!
 
 
Homestyle Chicken Pot Pie
Ingredients:
2 lbs boneless skinless chicken breasts
1 bag frozen roasted seasoned potatoes
1 bag frozen mixed veges (peas, corn, green beans)
1 13 oz can cream of mushroom soup
1 13 oz can cream of chicken soup
1/2 can milk
1 can butter biscuits

Preheat your oven to 350 degrees:

Spray the bean pot with cooking spray.
Saute your chicken in a skillet with a little butter or olive oil, season to taste and chop into bite size pieces.

Pour potatoes, veges, both soups, milk and cooked chicken into the bean pot, season with garlic, salt and pepper to taste and stir. Top it off with the canned biscuits and cover.
 
Bake at 350 degrees for 30 minutes until it is bubbly, uncover and allow the biscuits to brown. Remove from oven and serve! Serves 6.
 
 
 
 
Creamy Chicken Enchilada Casserole
1 1/2 lbs. chicken, cooked and cubed
1 package Spanish or Taco flavor rice, prepare as on package
In your favorite bean pot mix
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup onion
1 tsp. minced garlic
1-10 oz. can enchilada sauce
1-15 oz. can black beans

Add the cooked chicken and cooked rice to this mixture.
Top with a few (about 4-5) broken hard taco shells.
Sprinkle 1 cup cheddar cheese on top.
Bake uncovered at 350 degrees until cheese is melted!
 
 
 
 
Mexican Chicken Casserole

Cubed, Cooked Chicken (about 3 or 4 cups – or 3 or 4 boneless chicken breasts)
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel Tomatoes
½ cup Chicken Broth
12 corn tortillas
2 cups chopped onions
1 can diced jalapenos (optional)
1 can black beans, drained (optional)
3 cups grated cheese (any flavor, cheddar, Mozzarella, pepper jack, etc)
 
Combine soups, Rotel and chicken broth in a bowl. Stir until blended.
Add cubed chicken, beans, onions and jalapenos. Mix well.
Make layers of the tortillas, then chicken mixture and then cheese in your bean pot, just as you would if you were making a lasagna.

Bake at 325 for 30-45 minutes.
 
 

Bean Pot Pork Dishes

 
Baked Ham
Place ham in Bean Pot.
Cover with lid.
Place in 350°F oven for 2 ½ hours to 3 hours.
You may glaze ham in last 30 minutes of cooking with room temperature pineapple and brown sugar glaze.
 
*Baked Pork Chops in Creamy Gravy
4 Pork Chops (Boneless, Bone-in or use a 2 lb piece of tenderloin)
Salt and Pepper to taste
1 Tbsp Butter 3/4
Cup of milk
1/4 Cup of water
1 Can Cream of Mushroom Soup Melt butter in skillet over medium heat.
 
Preheat the oven to 350 degrees. Lightly brown pork on all sides. Remove Pork from skillet.
In a medium bowl, combine pan drippings, milk, water, soup, salt and pepper. Spread a thin layer of mixture in the bottom of the Bean Pot. Place pork on top. Cover pork with remaining soup mixture. Place lid on the Bean Pot and bake at 350 for 45 minutes.
 
 
 Italian Pork and Potatoes
1 pork tenderloin and 1 bottle Italian dressing.

Put tenderloin in bean pot and pour dressing over.
Cut red potatoes (as many as you like) in half and put on top.
Bake at 350 for 1 and 1/2 hours or until pork is done.
 
 
Pork Roast and Kraut
Take a lean pork roast and place in bean pot.
Open a large jar of kraut and pour juice out, fill it back up with water as to tone down the flavor a bit, then pour over the roast.
Season with salt and pepper
Place in the oven and cook about 3.5 hours at 250.
 
 
Pulled Pork BBQ
Use a small pork roast or buy a large one and cut to use later (freeze unused portions).
Chunk pork roast in 4 or 5 pieces (3 or 4 inches wide).
Put in bean pot and sprinkle your choice of BBQ Pork Rub generously on top.
Cover with apple juice to about 2 inches over top of roast.
Bake at 350 degrees for 2-1/2 hours. Lid on.
Remove from oven and drain juice.
Pull with fork and add your favorite BBQ sauce. Absolutely mouth watering!!
Serve on bun with slaw or serve as an entree with vegetables.
 
 
Cranberry Pork Tenderloin
Olive oil cooking spray
Spicy Brown mustard
1 Can of whole cranberries
1 and 1/2 cups water

Lightly spray inside of bean pot.
Place tenderloin in pot, coat well with mustard.
Place in oven and cook for 45 minutes (325) until mustard is baked in and browned.
Add can of cranberries and water, continue baking another 2 hours.
Use mitts to remove from oven, the pot will be hot.
 
 
Sweet & Sour Pork
1 can (20oz) pineapple chunks in juice
1 1/2-2 lbs pork, cut into 1 in chunks
1 med green pepper, sliced into thin strips
1/2 med onion, thinly sliced
1/4 C brown sugar
2 tbsp cornstarch
1/4 C cider vinegar or red wine
1/4 C water
3 tbsp soy sauce
1/2 tsp salt

Drain pineapple, reserving juice. Refrigerate pineapple
chunks until ready to use.
Place pork in your Bean Pot; add green pepper and onion.
In a bowl, combine brown sugar, cornstarch,
3/4 cup of pineapple juice, add water if needed, vinegar(or wine)
soy sauce and salt; blend until smooth and pour over pork and vegetables.
Cover and cook at 250 degrees for 7 hours. Add pineapple in the
final hour.
 
 
Smoked Sausage with Vegetables
Cut Smoked Sausage into chunks and put in Bean Pot.
Add 1 cup water, quartered potatoes, carrots, quartered cabbage, and any vegetable you like.

Cover with the lid.
Bake 350°F for about 20-30 minutes, or until veggies are done.
 
 
 
*Bean Pot Sausage and Peppers
4 Sweet Italian Sausages, sliced
1 Jar of tomato sauce of your choice (or make your own sauce, like I do!)
2 Green Peppers, thinly sliced
2 Tbsp. Olive Oil
1 Large Onion (I like Vidalia for the sweetness), thinly sliced.
Optional: Hoagie rolls (Italian bread) and Mozzarella cheese
 
In a saute pan, heat the olive oil. Add peppers and onions. Saute until onions and peppers are soft- do not brown.
 
In your bean pot, cover the base with tomato sauce. Place sausage slices into the bean pot, add onions and peppers. Top with remaining sauce, and stir together until all of the sausage and veggies are coated with sauce. Cover with lid. Place into a 350 oven for 25 minutes, or until sausage pieces are warmed through.
 
If you'd like, remove the bean pot from the oven and sprinkle desired amount of mozzarella cheese over the mixture. Replace lid to allow the cheese to melt for about five minutes.
 To serve, eat as is, or spoon into hoagie rolls.

Sausage Casserole
8 oz shredded cheddar cheese
1 lb sausage (browned)
1 can cream of potato soup
1 can cream of celery soup
1 cup minute rice (not cooked)
 
Place all ingredients in bean pot and stir well.
Microwave for 7 minutes - stop and stir well, then microwave for an additional 5 minutes.
